Crock Pot Rice and Turkey |
| Ingredients |
2 10.75 oz can cream of mushroom soup
3 cups water
3 cups uncooked converted white rice
1 cup thinly sliced celery
1 cup cubed cooked turkey
2 cups frozen peas and carrots -- or a frozen oriental vegetable mix
1 teaspoon poultry seasoning
1 tablespoon minced onion |

Pour soup and water into Crock-Pot and mix. Add remaining ingredients and stir. Cook 6 to 8 hours on Low or 3 to 4 hours on High. Add soy sauce if desired.

Easy Ground Beef Stroganoff |
| Ingredients |
2 teaspoons olive oil
2 teaspoons butter
1 large onion, chopped
8 ounces sliced mushrooms
1 pound lean ground beef
1 tablespoon all-purpose flour
1/3 cup liquid (beef broth, water, etc.)
1/2 teaspoon salt
2 tablespoons ketchup
1 cup (8 ounces) sour cream |
| Instructions |
Saute onion and mushrooms in oil and butter until onions are until tender. Remove and set aside. Brown ground beef in the same pan; drain off excess fat. Sprinkle flour over ground beef; stir to blend. Add liquid, onion, mushrooms, salt, and ketchup. Cook and stir until mixture is thickened; stir in sour cream and heat through. Serve over hot buttered noodles.

Shortcut Stroganoff |
| Ingredients |
2 pounds lean cubed stew beef
1 can cream of mushroom soup
8 ounces sliced mushrooms
1 envelope mushroom gravy
2 tablespoons sour cream
1 tablespoon all-purpose flour |
| Instructions |
Combine beef, soup, mushrooms and gravy in slow cooker. Cover and cook on low for 8 to 10 hours. Blend sour cream with flour; stir into stroganoff. Cook about 15 minutes more, or until well heated.
Serves 4 to 6. |

Speedy Stroganoff |
| Ingredients |
2 to 3 cups diced leftover roast beef
1 can (11oz) light cream of mushroom soup
1 envelope beefy onion soup (dry mix)
1 can or jar (4 oz) sliced mushrooms
1/2 to 3/4 cup cream or half and half
1 or 2 tablespoons sour cream, if desired
salt and pepper to taste |

Combine all ingredients except the cream in the crockpot. Cover and cook on low for 4 to 6 hours. Add cream and sour cream, if using, 10 minutes before done; salt and pepper to taste. Thin with water if desired.
